Easy Skewer Camping Recipe for the Whole Family!

There’s something about skewing your food on a stick in the woods, isn’t there? Well we’ve got some great kabob recipes that we’re dying to share with you! Whether you’re taking your new RV out for the first time or you’re a seasoned RVer, you can always use a great camping recipe. We’ve chosen one of our favorite skewer recipes!

 

Skewers Being Grilled

 

Grilled Thai Chicken Skewers

Ingredients

  • 1 pound boneless, skinless chicken thighscut into bite sized pieces
  • 1 small red onion
  • 1 red pepper
  • 2 teaspoons neutral oil
  • 1 teaspoon salt

Marinade

  • 1 tablespoon soy sauce(or tamari for GF)
  • 1 limejuiced (about 1 ½ tablespoons)
  • 2 teaspoons red curry paste
  • 1 teaspoon toasted sesame oil

Instructions

  • Fire up your grill or get your campfire going. This means cooking them over high heat.
  • Build your skewers: chicken on their own skewers, and the onions & peppers together. This is important, as they’ll heat differently and take different times to cook. Brush the veggie skewers with oil, and season the chicken skewers with salt.
  • Once the grill has reached a medium-high heat, place all the skewers on the grate. Grill, turning often, until the chicken has cooked through (about 10 minutes), and the vegetables are tender (7-10 minutes).
