Mini Quiche
Ingredients: 1 package pre-made pie crust, 4 eggs, 5 oz shredded cheddar cheese, 3 oz shredded swiss cheese, 3 slices of bacon, 1 cup of half and half, 1/2 cup chopped onion, salt and pepper to taste.
Instructions: Preheat oven to 400 degrees. Lightly grease a muffin tin and line the cups with pie crust. Bake the empty cups for 7-8 minutes. Beat eggs and add in half and half. Combine onion, chopped bacon, and cheeses in a separate bowl. Pour the egg mixture over the cheese mixture and stir. Remove the crusts from the oven and fill with the egg and cheese mixture. Bake for 15 minutes and then reduce the heat to 350 and return to the oven until golden brown.
Christmas Apple Punch
Ingredients: 4 cups apple cider, 12 oz pineapple juice, 2 cinnamon sticks, 1 apple (chopped), 1 orange (sliced)
Instructions: Combine ingredients, except for the chopped apple, in a large pot on the stove and heat until just boiled. Remove the cinnamon stick and cool or serve warm with apple chunks and a sprinkle of cinnamon.
Cinnamon Pancakes
Ingredients: 2 cups pancake mix, 1 1/2 cups water (or milk), 3 tsp cinnamon
Instructions: Heat your skillet to a medium-high heat and grease with butter. Combine the pancake mix and cinnamon, then add in your water or milk and stir until just combined. The mixture should be lumpy. Scoop 1/2 cup of batter onto the greased skillet and cook until it begins to bubble. Flip the pancake and cook until brown. Serve with maple syrup or a scoop of vanilla ice cream for an extra-special treat!
