There’s something about skewing your food on a stick in the woods, isn’t there? Well we’ve got some great kabob recipes that we’re dying to share with you! Whether you’re taking your new RV out for the first time or you’re a seasoned RVer, you can always use a great camping recipe. We’ve chosen one of our favorite skewer recipes!
Grilled Thai Chicken Skewers
(Thanks to Fresh Off the Grid for this recipe!)
- 1 pound boneless, skinless chicken thighs, cut into bite sized pieces
- 1 small red onion
- 1 red pepper
- 2 teaspoons neutral oil
- 1 teaspoon salt
- 1 tablespoon soy sauce, (or tamari for GF)
- 1 lime, juiced (about 1 ½ tablespoons)
- 2 teaspoons red curry paste
- 1 teaspoon toasted sesame oil
Fire up your grill or get your campfire going. This means cooking them over high heat.
Build your skewers: chicken on their own skewers, and the onions & peppers together. This is important, as they’ll heat differently and take different times to cook. Brush the veggie skewers with oil, and season the chicken skewers with salt.
Once the grill has reached a medium-high heat, place all the skewers on the grate. Grill, turning often, until the chicken has cooked through (about 10 minutes), and the vegetables are tender (7-10 minutes).
And then it’s time to enjoy the delicious flavors of this yummy recipe! It’s not too hard to make, and there’s not a huge list of ingredients. This ensures that it’s simple and easy to make over the fire. If you’ve been considering the RVing lifestyle and just haven’t taken that leap yet, check out our new RVs and our used RVs for sale.
