Camping Recipe: Fiesta Shrimp Packets

Ingredients:

  • 1 lb. medium shrimp
  • 3 ears corn
  • 1 zucchini
  • 2 cloves garlic
  • 2 tsp. ground cumin
  • 1 tsp. crushed red pepper flakes
  • Fresh cilantro
  • Extra-virgin olive oil, for drizzling
  • kosher salt
  • Freshly ground black pepper
  • 2 limes
  • 2 tbsp. butter

Directions:

  1. Wash and dry all produce.
  2. Pre-heat grill to high-heat.
  3. Chop the corn into quarters. Slice the zucchini in half lengthwise and then chop into 1″ pieces; mince garlic and roughly chop cilantro. Thinly slice the limes into rounds.
  4. Peel and devein the shrimp.
  5. Add the shrimp, corn, zucchini, garlic, cumin, red pepper flakes, and cilantro to a large bowl.
  6. Drizzle with olive oil and season with salt and pepper. Stir to coat all ingredients thoroughly.
  7. Cut four large pieces of heavy-duty aluminum foil for the packets.
  8. Divide the mix between the packets and top with 1/2 tbsp butter and 1/4th of the lime slices each.
  9. Seal the packets by bringing the edges up around the filling to meet and pinching closed to create a tight seal all the way around.
  10. Add packets to the grill and cook until shrimp turns pink, approximately 10-15 minutes.
  11. Serve hot! Be careful opening the packets since the steam will be extremely hot.
